- 2 small potatoes boiled peeled and. Grated

- Chopped coriander leaves 1tbsp
- Oil for frying
- For subzi 4 small boiled,peeled potatoes cut into cubes
- 1 tbsp crushed roasted peanuts
- 1 tsp cumin seeds
- 2-3 green chillies cut into pieces and few curry leaves
- I tbsp oil or ghee for tempering
- Salt and lemon juice according to taste
Steps to make to make Upvas Rajgira Puri and Aloo Sabzi
- In a mixing bowl take grated potatoes, add Rajgira flour,ground nut powder, coriander leaves, crushed ginger+ green chillies +cumin and salt. Mix all ingredients add little water may be two tablespoons. Prepare dough using little oil.
- Keep this dough for five minutes.
- Make even sized ball,
- Press each ball with palm and make Puris, on plastic or parchment paper dipping fingers in water so that dough does not stick.
- Fry puri in hot oil. Puffed puris are ready to be served with Aloosabzi
- For preparing sabzi,heat pan add 2tbsp oil, cumin seeds let them crackle. Add cut green chillies, curry leaves and sauté for some time. Add boiled cut potatoes, cover for two minutes. Add crushed ground nuts, salt and lemon juice. Cover and keep for one minute. Put off the fire. Remove subzi in serving bowl. It’s ready to be served with puris.
